1.5 pound Brussels sprouts, trimmed and cut in half
1 medium onion, small dice
3 cloves garlic, smashed or finely grated.
1 lemon, sliced thinly
1/4 cup toasted sesame seed
1/4 cup sherry or red wine vinegar
1/2 cup Milligan’s Maple Syrup
4 ea scallion, thinly sliced
2 sprigs mint, chopped
Salt & Pepper, to taste
Extra Virgin Olive oil, to taste
2 T Neutral Oil, such as canola or avocado
Instructions:
Place pan over medium-high heat. Add neutral oil once hot.
When the oil is shimmer, but not smoking, carefully add your sprouts to the pan in a single layer. Season with salt and cook undisturbed until the sprouts edges begin to brown. 3-5 minutes.
Toss ingredients in pan well, cook for an additional minute.
Add onions and garlic, stirring and cooking for another minute.
Add lemon, vinegar, and maple syrup, stir to combine, and return the pan to a simmer.
Cook for an additional 1-2 minutes, until the sprouts are well-glazed. Add mint and one half of the sesame seeds. Toss to coat.
Taste and adjust salt and pepper seasoning.
Place in serving dish, garnish with remaining sesame seeds and the sliced scallions.
